Mushroom Swiss Hamburger Recipe with Caramelized Onions

Ingredients
For the Burger:
  • ¼ cup of balsamic vinegar
  • 1 tablespoon of sugar
  • ¼ cup of olive oil
  • 1 sweet onion cut into ½" thick slices
  • 4 portobello mushrooms, gills removed
  • 1 pound of black angus ground beef
  • Kosher salt and fresh cracked pepper to taste
  • 4 slices of swiss cheese
  • 1 sliced tomato
  • red leaf lettuce for garnish

For the Potatoes:
  • 3 cloves of finely minced garlic
  • 12 red potatoes cut into small wedges
  • ½ cup of picked rosemary leaves
  • 3 tablespoons of olive oil
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. Burger: In a small bowl, whisk together vinegar, sugar and olive oil and pour into a plastic bag. Submerge the sliced onions and mushrooms in the bag with the balsamic mixture and place in the refrigerator and marinate for at least 30 minutes. Once marinated, remove from the bag and season with salt and pepper and reserve the marinade. Next, form 4 patties from the hamburger meat and season on all sides with salt and pepper and place on a very hot grill. Cook for 4 minutes on each side to reach a medium internal temperature. After you flip the burger, place the onions and mushrooms on the grill and caramelize. Frequently baste the onions and mushrooms with the balsamic marinade. Once everything is cooked remove from the heat. Place the burger on a bun along with swiss cheese, mushrooms and onions and garnish with tomato and lettuce.
  2. Potatoes: In a large bowl toss together all ingredients. Once combined, place on a sheet pan lined with parchment paper and bake at 425° for 15 to 20 minutes or until cooked through and golden brown. Serve along side the mushroom swiss burger.
