Mediterranean Roasted Chicken Recipe

This Mediterranean Roasted Chicken Recipe may be one of the easiest dishes to make of all time.  It’s all about the simplicity of a dish that can bring out the biggest flavors.  I know it seems that when you throw more things in to a recipe it becomes more flavorful, but sometimes when there are less ingredients it allows those bright flavors to shine through.  The olives in this Mediterranean Roasted Chicken Recipe really have a strong flavor and then when it’s coupled up with oregano, tomatoes and garlic, wow is it a treat.  This dish often times is a go to for me when feeding the family when I am stuck in a rut.  It’s easy to create, it cooks quick, and I almost always have the ingredients laying around the house.  Lastly, clean-up is really easy because this is a 1 pan meal.  It seems that when I am done cooking there are about 5 dirty dishes, ramekins and at least 3 pans in the sink, and this dish alleviates all of that.   So again, if you are looking for good, cheap and easy this Mediterranean Roasted Chicken Recipe is for you!

Mediterranean Chicken, Roasted Chicken With Tomatoes and Olives, Greek Chicken, Gabbiano Chianti Food Pairing

Mediterranean Roasted Chicken Recipe
Try this Mediterranean Roasted Chicken paired with a delicious Chianti!
  • 2 chicken breasts
  • 2 teaspoons of olive oil
  • 3 cloves of finely minced fresh garlic
  • ½ sliced sweet onion
  • 2 tablespoons of capers
  • ½ cup of assorted Spanish and Kalamata olives
  • 1 tablespoon of whole fresh oregano leaves
  • 1 tablespoon of chiffonade fresh basil
  • 16 ounce can of whole peeled tomatoes and juice
  • Kosher salt and fresh cracked pepper to taste
  1. Season both chicken breasts with salt and pepper and saute them until golden brown on each side in a hot skillet with 2 teaspoons of olive oil. Once brown, but not cooked through, remove from the pan and set aside.
  2. In that same pan, add in the garlic and onions to caramelize. One brown add in the capers, olives, herbs, tomatoes, salt and pepper and saute for 2 to 3 minutes.
  3. Next add the browned chicken breast back in the pan with the tomato mixture and place that pan in the oven on 400° for 8 to 12 minutes.
  4. Serve the chicken with the Mediterranean tomato sauce, fresh herbs for garnish and a glass of Gabbiano Chianti
