Filet Mignon with Figs and Bleu Cheese

Filet Mignon with Figs and Bleu Cheese
 
This Filet Mignon with Figs and Bleu Cheese paired with a Cabernet Sauvignon is the perfect dish when entertaining!
Ingredients
  • 8 ounce filet mignon
  • 1 tablespoon of olive oil
  • 1 tablespoon of chopped fresh rosemary
  • 4 quartered fresh figs
  • ¼ cup of balsamic vinegar
  • 1 tablespoon of honey
  • 1 teaspoon of Stilton bleu cheese
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. Rub the filet with olive oil, rosemary and salt and pepper to taste on all sides. In a hot saute pan, sear the filet on all sides until a medium-rare internal temperature is achieved (about 4 to 6 minutes on each side).
  2. Once the filet is cooked, remove it from the pan to let it rest. Place the quartered figs in the pan and return the pan to burner on medium-high heat and saute for 2 to 3 minutes. Deglaze with balsamic vinegar and honey and cook for 3 to 4 minutes or until thick.
  3. Top off the filet with the figs in balsamic vinegar and honet and top off with bleu cheese. Pair with Marques de Casa Concha Cabernet Sauvignon.
