Blueberry Oatmeal Bowl Recipe with Almond Milk, Fresh Fruit and Seeds

At the beginning of each new year I always promise myself that I’ll eat more clean and get more exercise.  Well I’m now repeating that resolution 5 years in a row strong and for some reason can’t seem to get fully on the band wagon.  I figured this Blueberry Oatmeal Bowl Recipe with Almond Milk, Fresh Fruit and Seeds would give me a little push in this new year to get things going.  The problem usually starts when I have a poor week of eating and I think to myself, “what’s 1 healthy meal going to do this week?”  I…

Dirty Mary With Stoli Gluten Free and Steak Tartare

Over the past 15 years of my culinary degree my taste muds have changed immensely. Even though it’s gone from sugary and fruity to the salty and savory I’ve always had a palette for quality, even in my younger years in the restaurant industry. Whether it be a cocktail or a certain course of a meal my taste buds are different and for the better. You may make fun of me but when I was 21 I was drinking daiquiri’s and fruity margaritas; Seriously can you imagine me with a big huge coconut drink in hand hah?! Fast forward 15…

Mini Vegetable Tortilla Shooters with Chicken Cheese Taquitos

You may have noticed in the past few years while eating out that mini plates and tapas seem to fill every menu. Well, it’s not a coincidence — in fact mini foods and bite-size dishes are a huge trend that are not only sweeping through restaurants but on the home front as well.  My wife and daughter love a variety of different tastes and foods so I always try to offer a number of different items, and the way I do it is by offering smaller portions.  These Mini Vegetable Tortilla Shooters with Chicken Cheese Taquitos allow me to serve…

Three Sisters Soup Recipe with Chicken

Gosh I love soup, I know I say it all the time but it’s true, and this Three Sisters Soup Recipe with Chicken is so comforting that you’ll be sure to make it a few times this winter season. For this recipe you can either trim up a grocery store bought rotisserie chicken or simply carve up one roasted from scratch, you choose. Once it’s trimmed, use the leftover chicken bone carcass to make a simple stock.  Add in some onions, celery, carrots, bay leaves and fresh thyme leaves and lightly simmer over low heat for 2 to 4 hours. If…

Homemade French Baguette Bread with Artichoke and Spinach Dip

I have done more baking in the past year than I have since I was in culinary school, no joke.  Form extravagant cakes, to pies, bread puddings, you name it and I’ve baked it.  One thing I haven’t done much of is baking fresh bread and after today I’m all in because I am still in awe at how amazing my French Baguette bread turned out, seriously amazing!  While it takes time, it’s not hard to make the end result far supersedes anything you are going to buy in your local grocery store.        The dough is such a simple combo of…

Homemade Hawaiian Pizza with Semolina Crust

I always say that I am constantly on the look for the best pizza… I just never realized that it may be in my own kitchen.  One thing that is incredibly traditional to the folks in Italy, but not America, is the semolina crust.  Talk about delicious, WOW!  I can’t help it, but I’m a sucker for the Canadian bacon and pineapple pizza.  It’s where that beautiful bliss in your mouth happens where sweet meats salty and it’s amazing. If you follow my site regularly you’ll see that I make quite a lot of pizzas, but this Homemade Hawaiian Pizza…

Easy Chicken Chowder Recipe

In the spirit of my pursuit of Eating Through the Kitchen Cabinets, I made this Easy Chicken Chowder Recipe.  I had a box of chicken stock, some 1/2 & 1/2, cream sherry, flour, butter, frozen corn, bacon, butter beans, onions, celery and garlic.  The only thing I didn’t have were some chicken breasts and red potatoes.  So first off congratulations to me, because as a chef it can be hard to work within constraints of limited ingredient amounts, especially if I can only get a max of 5 extra items from the store to complete my recipe.  However it’s a fun…
