Pizza Dough: Using the hook attachment in a kitchen aid mixer on low speed blend flour, salt, sugar and yeast. Next, slowly drizzle in olive oil until combined and then slowly drizzle in cold water.
Once combined turn it to medium speed and mix for 5 to 7 minutes. Once combined add to a flour dusted surface and form small dough balls (should be 4 individual balls) and place them on a flour dusted pan. Next, our a little olive oil over the top of each dough ball, wrap the pan completely and place in the refrigerator over night. After resting, simply roll the dough out on a flour dusted surface using your hands and knuckles (Do not use a rolling pin as it will not work that well, you need to stretch the dough using your hands).
Pizza Sauce: In a medium size pot with olive oil, caramelize garlic and onions. Once caramelized add in crushed tomatoes and cook until a simmer beings. Next, whisk in tomato paste and add all ingredients and cook on low heat for 15 to 20 minutes.
Roasted Veggies: Mix the cut vegetables in a bowl with olive oil, salt and pepper and spread them out on a sheet pan lined with parchment paper and bake on 450° for 10 to 15 minutes or until golden brown.
Roasted Veggie Pizza: Once the dough is rolled out, the sauce is made and the veggies are roasted and cut, you are ready to go. Place the rolled out dough on a cutting board dusted with corn meal. Next using a two ounce ladle add the pizza sauce and generously spread it over the pizza dough making sure to leave some room for the outer crust. Next add on the cheese, followed by the roasted veggies and transfer to a pizza stone or a sheet pan dusted with corn meal on 500° for 8 to 12 minutes. NOTE: If using a stone place it in the oven during the preheat process.
Margherita Pizza: Place the rolled out dough on a cutting board dusted with corn meal. Simply spread on the tomato slices, buffalo mozzarella, fresh basil and season with salt and pepper and transfer to a pizza stone or a sheet pan dusted with corn meal on 500° for 8 to 12 minutes. NOTE: If using a stone place it in the oven during the preheat process.
To Plate: Cut slices using a large knife or pizza roller and enjoy!
