Gruyere and Scallion Biscuit Croque Monsieur Recipe

Ingredients
For the Biscuits:
3cupsof all purpose flour
2tablespoonsof baking powder
2teaspoonof Kosher salt
6tablespoonsof ice cold unsalted butter shredded on a grater
5ouncesof shredded gruyere cheese
1/2cupof green onions
1cupof ice cold whole milk
2eggs
For the Orange Marmalade:
½cupof orange marmalade
juice of 5 fresh oranges
zest of 2 oranges
½cupof packed light brown sugar
2tablespoonsof honey
1teaspoonof ground cinnamon
For the Croque Monsieur:
4poached or fried eggs
4thick slices of ham
4slicesof swiss cheese
sliced green onions for garnish
Instructions
Preheat the oven to 375°
Biscuits:In a large bowl mix together the flour, baking powder, shredded ice cold buttershredded gruyere cheese, green onions and salt and then form a well.
In a separate bowl whisk together the eggs and milk and pour them into the center of the flour well.
Use a fork to combine the ingredients.
Once combined sprinkle some flour on a clean surface and slightly roll out the dough until it is 1 inches thick, do not over knead.
Use a circle cookie cutter to make a circle that is about 2 inches across and place them on a sheet pan lined with parchment paper. There should be enough dough to make 10 biscuits.
Bake them for 25 minutes or until golden brown on top.
Marmalade: Add all ingredients to a medium sized pot and bring to a boil and cook until it becomes thick. Cool to room temperature.
To Serve: Cut the biscuit in half and on the bottom layer add on a slice of swiss cheese and piece of ham and melt it under the broiler on low heat. Next, spread on a tablespoon of orange marmalade, followed up with a poached or fried egg and garnish with sliced green onions.
