Ingredients
For the Hash:

tablespoons
of olive oil

sliced russet potatoes

sliced sweet potato
1/2
chopped red bell pepper
1/2
chopped green bell pepper
1/2
chopped yellow bell pepper
1/2
chopped red onion
3
chopped cloves of garlic
2

Kosher salt and fresh cracked pepper to taste
For the Gravy:
2
tablespoons
of butter
1/2
small diced yellow onion
3
finely minced cloves of garlic
2
heaping tablespoons of flour
2
cups
of whole milk

For the Eggs:

tablespoons
of butter

eggs
Kosher salt and fresh cracked pepper to taste
Instructions
In a large cast iron skillet on high heat with olive oil add in the potatoes and cook until browned and softened, about 15 minutes.
Next, add in the peppers, onions and garlic and cook for a further 5 minutes.
Finish by adding in the sliced sausage and salt and pepper and cook for 2 more minutes. Keep warm.
Next, add 2 tablespoons of butter to a small pot over medium high heat and add in the onions and garlic to brown, about 5 to 6 minutes.
Stir in flour until completely combined to form a roux.
Pour in the milk and bring to a boil while constantly whisking. Once thick, season with salt and pepper and set aside and keep warm.
Add 2 tablespoons of butter to a non-stick frying pan and cook 4 eggs to your desired style and doneness. Season with salt and pepper.
To Plate: Place the eggs on top of the hash and pour the gravy over top. Garnish with sliced chives.
