Ingredients
For the Crust:
2cupsof all-purpose flour
½cupof almond meal
¾cupof sugar
1stick of unsalted butter
1egg yolk
3 to 4tablespoonsof ice cold water
For the Filling
1 ½sticks of unsalted butter
1 ¼cupof almond meal
1/3cupof all-purpose flour
3eggs
¾cupof sugar
For the Topping:
1stick of unsalted butter
¾cupof sugar
¼cupof heavy whipping cream
2cupsof sliced almonds
For the Berries and Cream:
1pintof trimmed and quartered fresh strawberries
2tablespoonsof honey
1cupof heavy whipping cream
¼cupof sugar
Instructions
Preheat the oven to 350°.
Crust: Add all of the ingredients to a food processor and pulse until it forms a meal. Transfer the mixture to a 10" tart pan and press down to mold it to the pan. Add on a circle piece of parchment paper and dried beans and par bake for 20 minutes. Set aside to cool.
Filling: Place all of the ingredients into a stand mixer with the paddle attachment and whip on high for 5 minutes or until light and fluffy. Set aside and keep cool.
Topping: Place all of the ingredients except for the almonds into a medium sauce pot and bring to a boil for 30 seconds and then pour in the almonds and mix together. Set aside.
Next, pour the filling into the par baked tart pan and evenly spread it out. Next, evenly add on the topping and then bake at 350° for 40 to 50 minutes or until it is browned and firm on the outside edges. Let completely cool to room temperature.
Berries and Cream: Mix the berries with the honey in a medium size bowl and set aside.
Next add the cream and sugar to a stand mixer with the whisk attachment and whisk on high until stiff peaks are formed.
Once the tart has cooled garnish with strawberries and whipped cream.
