INGREDIENTS:
– shrimp shells
– mirepoix
– herbs
– tomato paste
– white wine or cognac
– water or fish stock

Start by cooking the
shrimp shells in a large pot over medium heat until the shells turn pink. Set them aside.

with a little more butter, lightly brown the mirepoix and herbs, about 4-6 minutes.
