Ingredients
For the Dip:
4cans of strained and rinsed Cannellini beans
6 to 8clovesof roasted garlic
juice of 1 lemon
1/2 to 3/4cupsof extra virgin olive oil
3tablespoonsof fresh oregano leaves
Kosher salt and fresh cracked pepper to taste
sliced hot pita bread
For the Oregano Gremolata:
2tablespoonsof finely minced fresh oregano
2tablespoonsof finely minced fresh parsley
2tablespoonsof finely minced fresh chives
zest of 1 lemon
1 1/2tablespoonsof olive oil
Kosher salt and fresh cracked pepper to taste
Instructions
For the Dip: In a robot coupe or blender, add all ingredients, besides the pita bread, and process until smooth. Transfer to a serving bowl and set aside.
For the Gremolata: Combine all ingredients and place dollops all over the top of the bean dip. Serve along side the sliced hot pita bread.
