Ingredients
For the Burger:
1poundof ground turkey breast
1poundof ground turkey thigh
1/3cupof sliced green onions
3finely minced cloves of garlic
2teaspoonsof finely minced fresh ginger
Kosher salt and fresh cracked pepper to taste
sesame oil
For the Sweetened Soy Sauce:
1/2cupof soy sauce
1/2cupof brown sugar
3tablespoonsof honey
For the Vegetables:
1small sliced cucumber
1pintof quartered assorted cherry tomatoes
1/2sliced small red onion
1tablespoonof mayonnaise
1/4cupof rice wine vinegar
1teaspoonof sugar
Kosher salt and fresh cracked pepper to taste
Instructions
In a medium sized pot add in the soy, brown sugar and honey and cook on medium-high heat until it becomes thick like syrup. Take note that it will cook fast and can burn easily so watch closely. Once it is cooked, remove from the heat and let cool.
In a large bowl mix together both ground turkey meats, green onions, ginger, garlic , salt and pepper and form 6 patties. Next, brush the outside of the burger patties with sesame oil and cook on a very hot grill (450° to 550°) on each side until grill marks are formed and the burgers are cooked through (about 4 to 6 minutes on each side). Once they are cooked, set aside to rest for a few minutes before serving.
In a separate bowl mix together the mayonnaise, rice wine vinegar and sugar and add in the cucumber slices, quartered cherry tomatoes and red onions and mix.
Toast the buns on the grill and serve the turkey burgers on each of them. Top off by drizzling on 1 teaspoon of the sweetened soy and a few tablespoons of the mixed vegetables.
