Southwest Turkey Burger with Guacamole and Chipotle Mayo

Ingredients
For the Guacamole:
1seeded and mashed fresh avocado
½small diced sweet onion
½seeded and small diced jalapeño
juice of ½ lemon
1 ½teaspoonsof ground cumin
Kosher salt and fresh cracked pepper to taste
For the Chipotle Mayonnaise:
1 ½finely minced chipotle peppers in adobo sauce
¾cupof mayonnaise
juice of ½ lemon
Kosher salt and fresh cracked pepper to taste
For the Turkey Burgers:
48-ounce turky patties
3tablespoonsof olive oil
1thickly sliced red onion
1un-shucked ear of corn
1thinly sliced tomato
2leavesof green leaf lettuce
2slicesof pepper jack cheese
2slicesof cheddar cheese
2brioche hamburger buns
Kosher salt and fresh cracked pepper to taste
Instructions
Guacamole: Mix together all of the ingredients in a large bowl until completely combined and keep cool.
Chipotle Mayonnaise: Mix together all of the ingredients in a large bowl until completely combined and keep cool.
Turkey Burgers: Preheat the grill to high heat.
Brush both sides of the burgers and sliced red onions with olive oil and season with salt and pepper.
Place the burgers, onions and corn on the grill and cook.
Grill the burgers and onions on each side for 4 to 5 minutes or until golden brown and cooked.
Cook the corn on all sides for a total of 15 minutes. Once it’s done cooking shuck and slice of the cob.
To Plate: place a leaf of green leaf lettuce and then a cooked turkey burger on the bottom of a brioche but and add on a slice of cheddar. Next add on the other cooked turkey burger and add on a slice of pepper jack. Top off with sliced tomatoes, grilled onions, a few tablespoons of guacamole, a tablespoon of chipotle mayo, some grilled corn and then the top of the brioche bun.
