For the Butter:

  • 4 ounces of unsalted butter
  • 1 tablespoon oh honey
  • salt to taste

For the Bread:

  • ½ cup of unsalted butter
  • ½ cup of vegetable oil
  • ¾ cup of sugar
  • 2 eggs
  • 1 ½ teaspoons of vanilla
  • 2 cups of mashed ripe bananas
  • 1 ½ cups of Bob’s Red Mill® Organic All-Purpose Flour
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • pinch of salt
  • ½ cup of chopped walnuts + 2 tablespoons
  • 1 tablespoons of light brown sugar


  • Preheat the oven to 350°.
  • For the butter: In a standing mixer with the paddle attachment cream together the butter, honey and salt until light and fluffy. Keep cool.
  • For the bread: In a standing mixer with the paddle attachment cream together the butter, oil and sugar.
  • Once it is light and fluffy add the eggs 1 at a time until combined and then slowly beat in the vanilla and mashed bananas until combined.
  • In a large bowl mix together the flour, baking soda, baking powder and salt until combined and slowly beat it into the creamed butter mixture.
  • Once combined fold in the walnuts and distribute it between 2 floured and greased loaf pans.
  • Mix together in a small bowl the extra walnuts and brown sugar and sprinkle on top of the bread.
  • Bake the bread at 350° for 45 to 5 minutes or until golden brown and top and firm in the center.
