Ingredients
For the Burger:
1/2poundof pork belly cut into 1/2" inch thick by 1" inch long pieces
1/4cupof bourbon
1/4cupof brown sugar
4thickly sliced pieces of fresh pineapple
2poundsof ground turkey meat formed into 8 ounce patties
Kaiser rolls
4butter leaf lettuce pieces
4slicesof mozzarella cheese
4tablespoonsof olive oil
Kosher salt and fresh cracked pepper to taste
For the Fries:
3potatoes cut into fry like slices
1small diced large sweet onion
1/2ounceof unsalted butter
1tablespoonof sugar
Kosher salt and fresh cracked pepper to taste
Instructions
Bacon: In a large saute pan on medium high heat add in the bacon and brown on one side (3 to 4 minutes).
Flip them over and deglaze with bourbon and add in the brown sugar and gently stir. Finish the bacon in the oven on 350° for 10 minutes.
Burger: Once the patties are formed and the pineapple has been sliced coat them on all sides with olive oil and season only the turkey meat.
Place the turkey on a hot grill (450° to 550°) and cook on each side for 6 to 7 minutes or until it is browned on the outside and cooked through out. Finish by adding on cheese
After you flip the turkey burger for the first time, add on the pineapple and grill to form grill marks.
Once it is cooked remove from the heat and let rest for 2 to 3 minutes.
Fries: In a large saute pan on medium heat with butter, add in the onions and caramelize (15 to 25 minutes). Add in the sugar after a few minutes to help sweeten and brown. Keep warm.
Next add the fries to a deep fryer on 350° and cook until golden brown (6 to 8 minutes). Once they are brown, drain the oil, add them to a bowl and toss with the caramelized onions, salt and pepper.
To Plate: place down the bun and stack on the lettuce, burger, pineapple and bacon. Serve alongside the fries.
