Roasted Garlic and White Bean Dip with Pita

Ingredients

For the Dip:

  • 4 cans of strained and rinsed Cannellini beans
  • 6 to 8 cloves of roasted garlic
  • juice of 1 lemon
  • 1/2 to 3/4 cups of extra virgin olive oil
  • 3 tablespoons of fresh oregano leaves
  • Kosher salt and fresh cracked pepper to taste
  • sliced hot pita bread

For the Oregano Gremolata:

  • 2 tablespoons of finely minced fresh oregano
  • 2 tablespoons of finely minced fresh parsley
  • 2 tablespoons of finely minced fresh chives
  • zest of 1 lemon
  • 1 1/2 tablespoons of olive oil
  • Kosher salt and fresh cracked pepper to taste

Instructions

  1. For the Dip: In a robot coupe or blender, add all ingredients, besides the pita bread, and process until smooth. Transfer to a serving bowl and set aside.
  2. For the Gremolata: Combine all ingredients and place dollops all over the top of the bean dip. Serve along side the sliced hot pita bread.
