Ingredients
For the Scones:
3cupsof Bob’s Red Mill® All-Purpose Flour
1/2cupof sugar
1tablespoonof baking powder
pinchof Kosher salt
1cupof roughly chopped fresh strawberries mixed with ¼ cup of sugar
2eggs
½cupof whole milk
1stick of ice cold unsalted butter shredded on a cheese grater
For the Egg Wash:
1egg
1tablespoonof whole milk
For the Glaze:
2tablespoonsof whole milk
½cupof sifted powdered sugar
zest of 1 lemon.
Instructions
Preheat the oven to 375°
In a large bowl mix together the flour, ½ cup of sugar, baking powder, salt and butter until completely combined.
In a separate medium sized bowl whisk together the eggs and milk and pour it into the dry ingredients bowl along with the strawberries and mix together with a fork until it is combined to form a dough.
Form the dough until it makes a large disk about 1 inch thick and cut it into pie slices and place them on a sheet pan lined with parchment paper.
In a small bowl whisk together the egg and milk and brush the top of each scone with the wash to help brown.
Place the sheet pan in the oven and bake for 20 to 24 minutes or until they are golden brown on top and cooked in the middle.
Let them cool completely before serving.
While they are cooling whisk together the milk and sifted powdered sugar in a small bowl until combined and drizzle on top of the scones along with some fresh lemon zest. Enjoy!
