Ingredients
4cupsof cooked Bob’s Red Mill® Tricolor Quinoa
2cupsof chopped fresh parsley
1/3cupof chopped fresh mint
½small diced red onion
1bunch of thinly sliced green onions
4cupsof assorted cherry tomatoes cut in half
1thinly sliced English cucumber
two 16-ounce cans of strained and rinsed chickpeas
2cupsof thinly sliced fresh kale
zest of 2 lemons
juice of 2 ½ lemons
¼cupof red wine vinegar
½cupof olive oil + 2 tablespoons
one 4-ounce block of feta cheese
Kosher salt and fresh cracked pepper to taste
Instructions
Add all of the ingredients into a large bowl except for the juice of ½ lemon, 2 tablespoons of olive oil and feta cheese and mix until completely combined and chill.
In a hot sauté pan with 2 tablespoons of olive oil sear the feta on both sides until a golden brown curst has been formed, about 2 minutes on each side. Deglaze with juice of ½ lemon and add to the top of the salad before serving.
