Apple Cake Recipe with Oatmeal Streusel

For the Cake:

  • 4 ounces of unsalted butter
  • ½ cup of packed light brown sugar
  • ½ cup of sugar
  • 2 eggs
  • 1 teaspoon of vanilla
  • ½ cup of sour cream
  • 1 ½ cups of all-purpose flour
  • 1 ½ teaspoons of baking powder
  • ½ teaspoon of Kosher salt
  • ½ teaspoon of cinnamon
  • 3 peeled cored and small diced honey crisp apples

For the Streusel:

  • 4 ounces of butter
  • ¾ cup almond meal
  • ½ cup of packed light brown sugar
  • 1 cup of Bob’s Red Mill Rolled Oats
  • ½ teaspoon of cinnamon

For the Caramel:

  • 1 cup of packed light brown sugar
  • ½ cup of butter
  • ¼ cup of heavy whipping cream
  • 1 tablespoon of amaretto or like liqueur


  1. Preheat the oven to 350°.
  2. Cake: In a standing mixer with the paddle attachment on high speed, cream together the butter and sugar until light and fluffy.
  3. Add in 1 egg at a time until mixed in and then add in the vanilla and sour cream.
  4. In a separate bowl mix together the flour, baking powder, salt and cinnamon and slowly add it to the mixer on low speed until incorporated.
  5. Fold in the apples and transfer the batter to a greased cast iron skillet.
  6. Streusel: In a large bowl cut the butter into the almond meal, brown sugar, oats and cinnamon until it is the size of a pea and evenly sprinkle the mixture over the apple cake batter.
  7. Bake in the oven for 35 to 40 minutes or until golden brown and top and cooked in the center.
  8. Caramel: In a small pot add in the brown sugar, butter and cream and bring it to a boil. Turn it to low heat and cook until thick. Finish by whisking in the amaretto.
  9. Serve vanilla ice cream over the apple cake with streusel and pour caramel over the top.
