Lots of leftover apples? Try this tempting Apple Cake Recipe with Oatmeal Streusel that is covered in caramel and ice cream!

Ingredients
For the Cake:
4ouncesof unsalted butter
½cupof packed light brown sugar
½cupof sugar
2eggs
1teaspoonof vanilla
½cupof sour cream
1 ½cupsof all-purpose flour
1 ½teaspoonsof baking powder
½teaspoonof Kosher salt
½teaspoonof cinnamon
3peeled, cored and small diced honey crisp apples
For the Streusel:
4ouncesof butter
¾cupalmond meal
½cupof packed light brown sugar
1cupof Bob’s Red Mill Rolled Oats
½teaspoonof cinnamon
For the Caramel:
1cupof packed light brown sugar
½cupof butter
¼cupof heavy whipping cream
1tablespoonof amaretto or like liqueur
Instructions
Preheat the oven to 350°.
Cake: In a standing mixer with the paddle attachment on high speed, cream together the butter and sugar until light and fluffy.
Add in 1 egg at a time until mixed in and then add in the vanilla and sour cream.
In a separate bowl mix together the flour, baking powder, salt and cinnamon and slowly add it to the mixer on low speed until incorporated.
Fold in the apples and transfer the batter to a greased cast iron skillet.
Streusel: In a large bowl cut the butter into the almond meal, brown sugar, oats and cinnamon until it is the size of a pea and evenly sprinkle the mixture over the apple cake batter.
Bake in the oven for 35 to 40 minutes or until golden brown and top and cooked in the center.
Caramel: In a small pot add in the brown sugar, butter and cream and bring it to a boil. Turn it to low heat and cook until thick. Finish by whisking in the amaretto.
Serve vanilla ice cream over the apple cake with streusel and pour caramel over the top.
