Learn the benefits of cooking in parchment with paper with this easy to make Tilapia en Papillote.
Ingredients
  • two 6 to 8 ounce fillets of fresh tilapia
  • ½ julienne red bell pepper
  • ½ julienne yellow bell pepper
  • ½ julienne sweet onion
  • 4 tablespoons of olive oil
  • 2 vine ripe tomatoes cut into wedges
  • 6 sliced shitake mushrooms
  • 2 slivered cloves of garlic
  • 1 tablespoon of chopped fresh ginger
  • 2 tablespoons of fresh chiffonade basil
  • 2 tablespoons of fresh cilantro leaves
  • juice and zest of 1 lime
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. Spray the parchment paper with a non-stick lubricant.
  2. Then simply lay down the peppers and onions while seasoning with olive oil, salt and pepper.
  3. Next, add the fish and place the tomatoes and mushrooms on top and around the fish.
  4. Top off with basil, cilantro, garlic, ginger, lime juice, lime zest, olive oil, salt and pepper
  5. Wrap up the fish turning over the edges of the paper to fold it in so it is securely wrapped. This will create a steaming/roasting cooking process.
  6. Back it on a sheet pan at 350 degree for 20 to 25 minutes. Enjoy
