Teriyaki Roasted Chicken and Spicy Stir-Fry Vegetables

For the Chicken:
  • 6 chicken thighs
  • 5 chicken wings
  • ½ cup of packed brown sugar
  • 2 tablespoons of minced shallots
  • 2 tablespoons of minced ginger
  • ½ cup of soy sauce
  • ½ cup of rice wine
  • ½ cup of sesame oil
  • Sesame seeds and chopped fresh cilantro for garnish
For the Vegetables:
  • ½ head of sliced green cabbage
  • 4 carrots peeled and sliced thin
  • 4 stalks of celery sliced thin
  • 1 cup of sliced green onions
  • ½ sliced yellow onion
  • 3 cloves of finely minced fresh garlic
  • 2 tablespoons of sesame oil
  • ¼ cup of chili paste (or Srirachi)
  • ¼ cup of soy saice
  • 1 cup of chicken stock
  • Kosher salt and fresh cracked pepper to taste
  1. In a bowl whisk together brown sugar, shallots, ginger, soy sauce, rice wine and sesame oil and place in a plastic slider bag along with the chicken parts. Place the bag in the refrigerator to marinate for at least 30 minutes. Once marinated place the chicken on a sheet pan lined with parchment paper and roast in the oven on 500° for 20 to 25 minutes. Once finished remove from the heat and garnish with sesame seeds and cilantro.
  2. In a large wok on high heat with 2 tablespoons of sesame oil caramelize the garlic and yellow onion. Once brown add in cabbage, carrots and celery and stir-fry on high heat for 2 to 3 minutes. Next, pour in chili paste, soy sauce and chicken stock and cook for another 3 to 4 minutes. Adjust the seasonings with salt and pepper and finish with the sliced green onions. Place along side the chicken.
