Spinach Salad with Strawberries & Balsamic Vinaigrette

Easy Spinach Salad, Homemade Balsamic Vinaigrette, Roasted Pepper Salad, Strawberry and Spinach Salad, Feta Cheese and Strawberries

Spinach Salad with Strawberries & Balsamic Vinaigrette
 
Make this refreshing Spinach Salad with Strawberries & Balsamic Vinaigrette that is sure to wow your guests!
Ingredients
  • 1 cup of sliced strawberries
  • ½ roasted julienne yellow bell pepper
  • ½ roasted julienne red bell pepper
  • ¼ cup of feta cheese
  • 4 cups of packed baby spinach
  • 1 English cucumber shaved with a vegetable peeler
  • ⅓ cup of balsamic vinegar
  • ½ cup of olive oil
  • 1 small diced small shallot
  • 1 tablespoon of sugar
  • 1 teaspoon of dijon mustard
  • 2 tablespoons of chiffonade fresh basil
  • Kosher salt and fresh cracked pepper
Instructions
  1. In a large bowl whisk together vinger, olive oil, shallot, sugar, digon mustard, basil, salt and pepper to make a vinaigrette and set aside. 2. In a separate large bowl mix together strawberries, peppers, feta cheese and spinach. Next, add in a small amount of vinaigrette and toss until completely coated. 3. Using the shaved cucumber, make a ring mold and place on a plate. Place the tossed salad inside of the ring mold and serve with Martin Codax AlbariƱo.
