Southwest Turkey Burger with Guacamole and Chipotle Mayo

As a family we are always hanging out in the back yard and grilling up some delicious food!  In the summer time we like to try new things, like new bbq recipes or new burger recipes, so I decided to make an insanely delicious turkey burger.  I was looking for a little kick in the spice department so I whipped up a really tasty chipotle mayo, that honestly would have been ridiculously tasty with some fries, but instead I dumped it all over my burger J.  In addition, the the chipotle mayo I made a really good guac recipe to even out some of that spice and provide a ton of balance to the burger.

Another thing we look for when it comes to cooking is quickness.  We’ve got a sweet, and crazy at times, 2 ½ year old that wants food and wants it now so speed of cooking is essential!  Butterball® makes some great frozen turkey burgers that cook up in minutes after being brushed with a little olive oil and seasoned with salt and pepper.  They are perfectly moist and great for our family because they are always in our freezer whenever we want’em.  In any event, hook this recipe up ASAP!

Southwest Turkey Burger with Guacamole and Chipotle Mayo
 
Fire up your grill and dry this amazingly delicious Southwest Turkey Burger with Guacamole and Chipotle Mayo Recipe that is sure to be a hit!
Ingredients
For the Guacamole:
  • 1 seeded and mashed fresh avocado
  • ½ small diced sweet onion
  • ½ seeded and small diced jalapeño
  • juice of ½ lemon
  • 1 ½ teaspoons of ground cumin
  • Kosher salt and fresh cracked pepper to taste
For the Chipotle Mayonnaise:
  • 1 ½ finely minced chipotle peppers in adobo sauce
  • ¾ cup of mayonnaise
  • juice of ½ lemon
  • Kosher salt and fresh cracked pepper to taste
For the Turkey Burgers:
  • 4 Butterball® Frozen Turkey Burgers
  • 3 tablespoons of olive oil
  • 1 thickly sliced red onion
  • 1 un-shucked ear of corn
  • 1 thinly sliced tomato
  • 2 leaves of green leaf lettuce
  • 2 slices of pepper jack cheese
  • 2 slices of cheddar cheese
  • 2 brioche hamburger buns
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. Guacamole: Mix together all of the ingredients in a large bowl until completely combined and keep cool.
  2. Chipotle Mayonnaise: Mix together all of the ingredients in a large bowl until completely combined and keep cool.
  3. Turkey Burgers: Preheat the grill to high heat.
  4. Brush both sides of the burgers and sliced red onions with olive oil and season with salt and pepper.
  5. Place the burgers, onions and corn on the grill and cook.
  6. Grill the burgers and onions on each side for 4 to 5 minutes or until golden brown and cooked.
  7. Cook the corn on all sides for a total of 15 minutes. Once it’s done cooking shuck and slice of the cob.
  8. To Plate: place a leaf of green leaf lettuce and then a cooked turkey burger on the bottom of a brioche but and add on a slice of cheddar. Next add on the other cooked turkey burger and add on a slice of pepper jack. Top off with sliced tomatoes, grilled onions, a few tablespoons of guacamole, a tablespoon of chipotle mayo, some grilled corn and then the top of the brioche bun.
