Roasted Ribeye Don Vito with Wild Mushrooms
 
You will love the huge flavors from this Roasted Ribeye with Don Vito sauce that is loaded with herbs, wild mushrooms and tomatoes.
Ingredients
  • 12 ounce ribeye
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh oregano leaves
  • 2 finely minced cloves of garlic
  • ½ cup sliced cremini mushrooms
  • 1 tablespoon of chopped shallots
  • ½ cup of cherry tomatoes cut in half
  • 2 tablespoons of julienne sun-dried tomatoes
  • 2 tablespoons of chiffonade basil
  • 1 bunch of asparagus
  • 1 ounce of unsalted butter
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. Season the ribeye with salt and pepper, and then rub it down with the oregano leaves, olive oil and 2 shaved garlic cloves.
  2. In a hot skillet sear the steak on both sides caramelizing it and cooking it to the desired temperature.
  3. Once the steak is at the temperature desired set it aside and add in the mushrooms, 2 shaved garlic cloves and shallots in the same pan to caramelize.
  4. Once those veggies are roasted add in the tomatoes, sun dried tomatoes and fresh basil and let cook on medium heat for 2-4 minutes.
  5. While the Don Vito sauce is cooking, par-boil the asparagus in boiling water until they are al dente and add to a pan with butter and salt and pepper to taste.
  6. Once the Don Vito sauce is nice and brown season to taste with salt and pepper and pour it over the ribeye with the asparagus on bottom.
