Potato Crusted Salmon Recipe with Sauteed Spinach

This Potato Crusted Salmon Recipe with Sautéed Spinach has always been one of the most popular recipes on BillyParisi.com.  I think because not only does it look amazing with that horseradish potato crust, but it’s also something a bit different and it’s fish.  Whenever I do a live cooking demo I try to do fish, if nothing else but for the simple fact that cooking fish at home can be intimidating and I want to show just how easy it is to prepare.  With this Potato Crusted Salmon Recipe with Sautéed Spinach I simply shredded a russet potato, squeezed out the water, and the add in some heavy cream, some horseradish (you can use freshly grated, prepared or a sauce), salt and pepper and tossed it together.  After that you sort of clump it together and press it right on top of the salmon and it will hold together like a charm, I swear it!  Next you want to sear it potato side down, handle it gently when flipping it over into the pan, in a hot saute pan with olive oil until golden brown.  It will take about 4 to 6 minutes to get a nice deep brown and at that point flip it over gently and finish it in the oven on 350° for 10 to 12 minutes or you can finish it right in the saute pan on the burner.

Horseradish Potato Crusted Salmon with Italian Spinach
 
Try this delicious Horseradish Potato Crusted Salmon with Italian Spinach that is loaded with flavor!
Ingredients
For the Salmon:
  • two 7 to 8 ounce fillets of salmon
  • 1 peeled and grated russet potato
  • ¼ cup of heavy cream
  • ¼ cup of horseradish sauce
  • 1 tablespoon of olive oil
  • Kosher salt and fresh cracked pepper to taste
For the Italian Spinach:
  • 1 tablespoon of olive oil
  • 1 thinly sliced small shallot
  • 2 finely minced cloves of fresh garlic
  • ½ cup of cherry tomatoes cut in half
  • 2 cups of packed baby spinach
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. In a bowl mix together grated potato, cream, horseradish and salt. Next, season both sides of the salmon with salt and pepper and place half of the potato mixture on top of the salmon skin side up making sure to cover the salmon completely. Push the potato down on the salmon to make sure it stays.
  2. In a hot skillet with 1 tablespoon of olive oil place in the salmon potato side down to form a crust. After 3 to 4 minutes flip the salmon over and finish in the oven on 350° for 8 to 12 minutes. Once finished remove from the pan.
  3. While the salmon is cooking in the oven heat up 1 tablespoon of olive oil in a skillet and caramelize shallots and garlic. Once brown add in tomatoes and saute for 2 to 3 minutes. Lastly, place in the spinach and saute for 1 to 2 minutes. Adjust seasonings with salt and pepper.
  4. To Plate: Place down the Italian Spinach and put the salmon potato side up on top of the spinach.
