This Pork Tenderloin Recipe with Cherry Mustard Sauce is loaded with flavor and cooks in less than 30 minutes.
Ingredients
  • 1 pound pork tenderloin
  • 1 tablespoon of chopped fresh rosemary
  • 2 tablespoons of olive oil
  • 2 tablespoon of balsamic vinegar
  • 1 heaping tablespoon of grainy mustard
  • ¼ cup of beef stock
  • ¼ cup of dried cherries
  • 2 tablespoons of chopped fresh parsley
  • 2 cups of cooked jasmine rice
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. In a large bowl mix together pork, rosemary, olive oil, vinegar and salt and pepper and marinate in the refrigerator for 30 minutes. Once marinated remove from the marinade and cook in a large pan on medium-high heat to brown on all sides (10 to 12 minutes). Finish it in the oven on 350° for 5 to 10 minutes for desired amount of doneness.
  2. Once the pork is done, remove it from the pan and return that pan to a burner on high heat. Add into that pan mustard, beef stock, cherries, parsley and adjust seasonings with salt and pepper. Cook the mixture until it becomes thick. Once cooked pour it over the sliced pork tenderloin and serve alongside the cooked jasmine rice.
