Horseradish Roasted Potatoes and Mushroom Stuffed Steak
 
Make this delicious Horseradish Roasted Potatoes and Mushroom Stuffed Steak recipe that is loaded with flavor!
Ingredients
For the Steak:
  • 4 slices of diced bacon
  • 10 to 12 thinly sliced button mushrooms
  • 1 diced fresh tomato
  • 2 tablespoons of minced fresh thyme
  • two 8 to 10 ounce thick cut top sirloin steaks
  • 1 tablespoon of olive oil
  • Kosher salt and fresh cracked pepper to taste
For the Potatoes:
  • 15 to 20 baby red potatoes
  • 1 ounce of unsalted butter
  • 3 tablespoon of minced fresh dill
  • 1 tablespoon of grated fresh horseradish or raw prepared
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. Steak: In a large saute pan on high heat add in bacon and cook until crispy. Once cooked remove the bacon lardons and return the pan to the heat and add in mushrooms to caramelize. When the mushrooms are brown add in the diced tomato and saute for 3 to 4 minutes. Finish with thyme, salt and pepper and set aside.
  2. Using a sharp knife filet and roll out the beef (see video) until it is a long thin strip of beef and season it with salt and pepper. Take the mushroom bacon mixture and generously spread it all over the seasoned beef.
  3. Next starting at one end roll it up just as you filleted it using the knife and using some butchers twine tie it up tight to make sure the beef does not un-roll and the stuffing does not come out.
  4. In a large saute pan on high heat with 1 teaspoon of olive oil place in the steaks to sear in the stuffing and caramelize the beef. After sauteeing for 3 to 4 minutes, finish in the oven on 375° for 8 to 10 minutes for medium-rare or until desired amount of doneness.
  5. Potatoes: In a large pot of boiling salted water add in the potatoes and cook for 10 to 12 minutes, Once cooked strain and add to a large bowl with butter, dill, horseradish, salt and pepper and mix thoroughly.
  6. To Plate: Remove the butchers twine from the steak and slice the steak into 3 pieces taking care to keep in the stuffing. Fan the sliced steak and serve along side the potatoes.
