Mediterranean Grilled Pork Chops and Green Beans

Pork:
  • 1 tablespoons of ground cumin
  • 1 teaspoon of ground coriander
  • 1/4 teaspoon of ground cinnamon
  • 1 teaspoon of granulated garlic
  • 1 teaspoon of onion powder
  • 1 teaspoon of Kosher salt
  • 1/2 teaspoon of paprika
  • two double thick cut bone in pork chops
  • 2 tablespoons of olive oil
Beans:
  • 1 pound of fresh trimmed green beans
  • 2 vine ripe tomatoes, seeded and small diced
  • juice of 1 lemon
  • 1 tablespoon of fresh chopped oregano
  • crumbled Feta cheese to garnish
  • Kosher salt and fresh cracked pepper to taste
  • 1 tablespoon of olive oil
Serves 2 to 3
 
Procedures:
  1. In a small bowl mix together cumin, coriander, cinnamon, garlic, onion, salt and paprika.  Once mixed add 1 heaping tablespoon to a plate with 2 tablespoons of olive oil and coat the pork chops on all sides.  If you feel you need more seasoning be sure to add more.  Once coated cook on a very hot grill for 10 minutes on each side or until golden brown and cooked through out.  Once cooked, remove from the heat and let rest for 2 minutes before serving.
  2. In a large saute pan on high heat with 1 tablespoon of olive oil saute the green beans for 3 to 4 minutes.  Once they begin to turn a little brown, add in the tomatoes and saute for a further 2 to 3 minutes.  Next, add in lemon juice, oregano and seasonings and top off with crumbled feta cheese and serve along side the cooked porkchops.
