Man I LOVE Pork

Over the past few years it’s been kind of crazy to witness the big “bacon craze” that has taken the culinary world by storm.  It’s as if bacon was never discovered or for that matter tasted good?  I don’t know about you, but pretty much since I was 6 years old I have always had the mentality that if I had to eat one thing for the rest of my life it would be BACON!  Is bacon good for you?  It ain’t the best… Does bacon taste good?  You bet your sweet behind it does!  Now if you judged bacon alone, you would have to believe that other cuts of meat from pork are amazing as well right?!  YUP!  I often believe that normal everyday folks who cook to eat, get stuck in ruts and always turn to chicken or perhaps a boneless pork chop that is no thicker than my notebook (pathetic).  I’m here to tell you to explore the pig, not just because it tastes amazing but because it’s fairly inexpensive as well!

First, don’t you dare buy boneless pork chops!  There is a bone in there for a reason, FLAVOR!  The bone helps keep the juices isolated in the meat and adds a ton of natural flavor, there’s a reason your Uncle Darryl is always last at the dinner table gnawing on the bone of some animal, cause it tastes good!  Also ask the butcher to cut that sucker thick, that’s what he or she is there for.  Now that you are comfortable with pork chops, go see pork loin and pork tenderloin.  A whole pork loin could comfortably feed 6 plus and it won’t be all that expensive either.  There are so many great things you can do with a pork loin such as stuff, marinade, grill, sear, etc..  The pork tenderloin is just as tender as a filet mignon, without the high dollar, and has a lot more flavor since it comes from a pig.  I know this is brief and I’m sure you have some more questions, so find me on Facebook and Twitter and ask as many questions as you would like about pork!  Yes I took the picture in this blog, was working as a stage (for fun) at Top Chef 4 Winner Stephanie Izard’s restaurant Girl and the Goat., we went to culinary school together.  Cheers!
