Honey Baked Chicken with Asian Salad
 
Try this easy honey baked chicken that is loaded with flavor and a refreshing Asian salad on the side.
Ingredients
For the Chicken:
  • 5 small chicken legs
  • 1 tablespoon chopped fresh ginger
  • 3 tablespoons of Hoison sauce
  • 11/2 tablespoon of honey
  • 1 tablespoon od sesame oil
For the Salad:
  • 3 sliced vine ripe tomatoes
  • ½ sliced English cucumber
  • ½ sliced red onion
  • 1 tablespoon of chili garlic sauce
  • 1 tablespoon of rice wine vinegar
  • 1 tablespoon of soy sauce
  • 1 tablespoon of peanut oil
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. Season up the chicken drums with salt and pepper and place in a hot skillet with 1 tablespoon of olive oil.
  2. Brown on all sides and transfer to a sheet pan lined with parchment paper.
  3. In a bowl add in chopped ginger, hoison, soy and mix well.
  4. Using a pastry brush baste the chicken drummies with the honey-hoison mixture and place in the oven on 400° for 15-20 minutes assuring half way through the cooking process to re-baste the chicken.
  5. In the mean time cut the tomatoes, onions and cucumbers accordingly and place in a bowl and add the garlic paste, 1 tablespoon of oil, vinegar and soy. Mix thoroughly. After the chicken is cooked through plate up with the tomato-cucumber and garnish with chopped scallions.
