Homemade Tzatziki and Chicken Gyros

Ingredients
For the Gyros:
  • 3 boneless chicken breasts
  • 2 tablespoons of olive oil
  • 1 teaspoons of ground cumin
  • zest of 1 lemon
  • 1 tablespoons of grainy mustard
  • 1 tablespoons of dry oregano
  • 1 cup of cherry tomatoes cut in half
  • 1 julienne red onion
  • 2 cups of baby spinach
  • flat bread
  • Kosher salt and fresh cracked pepper to taste
For the Tzatziki:
  • 1 cucumber, peeled, seeded and small diced
  • 3 cups of plain yogurt
  • juice of 1 lemon
  • 4 tablespoons of chopped fresh dill
  • Kosher salt and fresh cracked pepper to taste
For the Potatoes:
  • 2 potatoes, peeled and cut into 1
  • 1 red bell pepper, seeded and cut into 1
  • 1 sweet onion peeled and cut into 1
  • 2 cloves of finely minced garlic
  • 3 tablespoons of olive oi
  • 2 to 3 tablespoons of chopped fresh oregano
  • ¼ cup of capers
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. Gyros: In a plastic slider bag add in chicken breasts, olive oil, cumin, lemon zest, mustard and oregano and marinate in the refrigerator for 20 to 30 minutes. Once marinated remove from the bag and saute in a large saute pan on medium-high heat for 4 to 5 minutes on each side or until completely cooked through. Once cooked remove from the pan and slice. Set aside and keep warm.
  2. Tzatziki: In a large bowl mix all the ingredients thoroughly and keep cool.
  3. Potatoes: In a large bowl mix together potatoes, pepper, onions, garlic, salt and pepper in olive oil. Once all vegetables are coated spread them out evenly on a sheet pan lined with parchment paper and bake at 500° for 15 to 20 minutes or until golden brown and cooked. Once finished remove from the heat and place the vegetables in a large bowl and toss them with fresh or dry oregano and capers.
  4. To Plate: Place a small amount of sliced chicken in the center of a warm pita shell along with some sliced tomatoes, onions, spinach and a few tablespoons of Tzaziki. Serve alongside the hot Greek style potatoes.
