Holiday Appetizers

I wrote a blog about appetizers sometime ago, but it fits too perfectly  not to re share it, and it completely applies to my “Holiday Food Series.”  So without further ado, here is the post and links to some fantastic appetizers that your family and friends will love!

“Appetizers are so important to any meal, whether it’s a sit down dinner or cold/hot canapes are being passed through out a room of your guests.  Why is this do you ask?  Think about it, if you can’t make a simple appetizer what will give your guests the impression that you know how to make something as complex as an entree or dessert.  Makes sense right?   I really enjoy tasty appetizers, they get my palette just right for the main course.  However there are some restaurants that give me so much that by the time I get to my entree I can barely eat it, and this to me is annoying!  The whole point of feeding people at your home or restaurant is to feed them so that they are satisfied and just full, not to send them home with a wheel barrow to carry their stomachs on the way to their cars.  So with that being said, let’s take a look at a few ideas, what-do-ya-say?

I love appetizers that are small with just a few bits and a one-two punch that is BOOMING with flavor.  The taste of appetizers should literally explode in your mouth leaving you to want more, but not enough to stuff yourself.  A few examples that come to mind are Oysters Rock, Asian Lettuce Wraps, Cornbread and Chorizo Canapes, the list could go on for days.  Another idea you want to consider is offering wines, beers and cocktails that compliment what it is you are serving.  Take caution when doing this, cause the last thing you want to do is serve PBR with some garlic and fresh thyme braised mussels.. Not a good look.  Also take into consideration which season you are in.  Don’t serve a ton of hot food items in the summer not should you serve a bunch of cold appetizers in the winter.  When I think of appetizers I think of extremely fresh and seasonal produce, but I am not saying pantry items cannot be used either, because they can.   So the next time you are making appetizers think of items that are small and powerful.  If you have any food related questions connect with me at facebook.com/chefbillyparisi or at twitter.com/chefbillyparisi.
