Ingredients
  • ten ounce strip steak
  • 1 seeded yellow bell pepper
  • 1 seeded red bell pepper
  • 5 tablespoons of olive oil
  • 2 cloves of garlic
  • 1 shallot
  • ½ cup of fresh parsley leaves
  • ¼ cup of fresh basil leaves
  • ¼ cup of of fresh oregano leaves
  • 2 tablespoons of fresh thyme leaves
  • juice of 1 lemon
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. In a robot coupe (puree machine) place the garlic and shallots and puree until a rough chop is achieved.
  2. Next, add in all the fresh herbs and lemon juice to puree until a fine mince is achieved.
  3. Slowly drizzle in the 4 tablespoons of olive oil and season with salt and pepper and set aside.
  4. Next, prepare the bell peppers and place on the grill to roast on high heat.
  5. To prepare the steak season both sides with salt and pepper and place next to the peppers on the grill on high heat.
  6. To achieve a medium-rare steak in temperature cook for 4-6 minutes on each side.
  7. Once the peppers are roasted and the steak is cooked to the desired doneness, julienne the bell peppers and slice the steak.
  8. Plate the dish up with the sliced peppers on the bottom with the sliced steak on top and the chimichurri sauce drizzled on the steak.
