One of the things I absolutely love about the spring and summer is the fresh produce that is available at the local grocery store.

Ingredients:

Yellow Squash

Green Zucchini

Red Onion

Asparagus

Corn

Cherry Tomatoes

Green Onions

Red Bell Pepper

On a plate mix together the olive oil and blackening season and coat the chicken on all sides and place on the grill.

Cook each side until dark grill marks are formed and they are cooked through. Set aside to rest before dicing.

Place all the vegetables on a sheet pan and coat thoroughly with olive oil, salt and pepper and roast on the grill for 3 to 5 minutes.
