Gourmet Burgers with Vinegar Coleslaw

Oh man were both of these gourmet burgers good!  The turkey burger oozing with mozzarrella cheese and smothered with BBQ sauce and avocado.  Then, you get to eat the basil garlic beef hamburger with grilled onions!  Seriously you could stop there, but no I finish it off with a refreshing vinegar slaw that is awesome.  If you’re stumped on making burgers, then look no further then this recipe for Gourmet Burgers with Vinegar Coleslaw.  To try a slight variation on this coleslaw then check out my Vinegar Based Coleslaw.

Ingredients
For the Onions:
  • ½ cup of balsamic vinegar
  • 1 tablespoon of sugar
  • ¼ cup of olive oil
  • 1 red onion sliced thick
  • 1 yellow onion sliced thick
For the Slaw:
  • ¼ cup of sherry vinegar (can substitute with cider, white balsamic or red wine vinegar)
  • 1 teaspoon of grainy mustard
  • 1 tablespoon of honey
  • ⅓ cup of olive oil
  • ¼ thinly sliced head of green cabbage
  • ¼ thinly sliced head of red cabbage
  • 1 julienne red bell pepper, seeds removed
  • 1 cup of thinly sliced green onions
  • 1 cup of match stick carrots
  • Celery seed to taste
  • Kosher salt and fresh cracked black pepper to taste
For the Turkey Burger:
  • 8 ounces of lean ground turkey
  • 1 finely minced roasted red bell pepper
  • ½ cup of shredded Mozzarella cheese
  • ¼ cup of bread crumbs
  • Lea and Perrins to taste
  • Kosher salt and fresh cracked black pepper to taste
  • BBQ sauce to taste

For the Beef Burger:
  • 8 ounces of lean ground beef
  • 2 finely minced large cloves of garlic
  • 5 large leaves of fresh basil, chiffonade
  • 1 teaspoon of unsalted butter
  • Kosher salt and fresh cracked black pepper to taste
  • leaf lettuce
  • sliced vine ripe tomates
  • sliced cheddar
  • white buns
Instructions
  1. Onions: In a small bowl whisk together vinegar, sugar and oil and pour into a plastic slider bag along with the sliced onions and mix around. Marinate in the refrigerator for at least 30 minutes. Once marinated cook on a very hot grill (450° to 550°) on 4 to 5 minutes on each side or until caramelized and soft. Use the remaining balsamic marinade to baste the onions while grilling. Once cooked remove from the heat.
  2. Slaw: In a medium sized bowl whisk together vinegar, mustard, honey, olive oil, salt and pepper to make a vinaigrette and set aside. In a separate large bowl mix together cabbages, pepper, onions and carrots. Toss the mixture with a small amount of vinaigrette, salt, pepper and celery seed until all of the vegetables are coated and to your desired taste. Set aside and keep cool.
  3. Turkey: In a large bowl mix together ground turkey, bell pepper, mozzarella, bread crumbs, lea and perrins and salt and pepper until thoroughly combined. Once mixed together form two 4 patties and place on a very hot grill (450° to 550°) and cook for 6 to 8 minutes on each side or until dark grill marks are formed and completely cooked through. Once cooked remove from the heat and set aside.
  4. Beef: In a small saute pan with butter, caramelize the garlic. Once brown add to a large bowl with ground beef, basil salt and pepper and thoroughly combine. Once mixed together form two 4 patties and place on a very hot grill (450° to 550°) and cook for 4 to 5 minutes on each side or until dark grill marks are formed or your desired internal temperature has been reached. Once cooked remove from the heat and set aside.
  5. To Plate: Place the cooked turkey burger on a pretzel bun, top off with BBQ sauce, a small amount of cooked balsamic onions and sliced fresh avocado. Place the cooked beef burger on a white bun and top off with lettuce, tomato, cheddar cheese and a small amount of cooked balsamic onions. Serve along side the vinaigrette cole slaw.
