Fajitas Recipe with Chicken and Pork

Ingredients
For the Rub:
  • 2 tablespoons of Kosher salt
  • 1 teaspoon of dry oregano
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of crushed red pepper flakes
  • 1 tablespoon of onion powder
  • 1 tablespoon of garlic powder
For the Chicken Fajitas:
  • eight ounce boneless skinless chicken breast
  • 2 tablespoons of olive oil
  • ¼ red bell pepper, julienne
  • ¼ green bell pepper, julienne
  • ¼ yellow bell pepper, julienne
  • ½ small sweet onion, julienne
  • 1 sixteen ounce can pinto beans
  • 1½ cup chicken stock
  • flour tortillas
  • 1 ounce of shredded white cheddar
  • Kosher salt and fresh cracked pepper to taste
For the Chicken Fajita Salsa:
  • 1 cup of frozen corn kernels or cooked fresh corn
  • 2 Roma tomatoes, seeds removed and small diced
  • ½ sweet onion, small diced
  • ½ medium size jalapeno, finely diced
  • 2 tablespoons finely minced fresh cilantro
  • Kosher salt and fresh cracked black pepper
For the Pork Fajitas:
  • 1 eight ounce pork tenderloin
  • 2 tablespoons of olive oil
  • 2 leaves of shredded green cabbage
  • 1 ounce of shredded white cheddar
  • corn tortillas
For the Pork Fajitas Salsa:
  • 2 mangos, peeled and diced
  • ½ sweet onion, diced
  • 3 tablespoon green onions, chopped
  • ½ red bell pepper, diced
  • 1 Jalapeno, peeled and chopped
  • 3 tablespoon fresh cilantro, chopped
  • juice of 1 lime
  • Kosher salt and fresh cracked black pepper to taste
Instructions
  1. Spanish Rub: In a medium size bowl, simply mix all dry seasonings and herbs together and set aside.
  2. Chicken Fajitas: In a medium sauce pot add in the beans, chicken, stock, salt, pepper and simmer on medium heat until warn.
  3. Next, rub the chicken down on both sides with the Spanish seasonings and place it in a medium size saute pan on high heat with 1 tablespoon of olive oil and sear it until is brown on both sides and cooked in the center.
  4. In a separate large saute pan on high heat with 1 tablespoon of olive oil, caramelize the peppers and onions. Season the peppers and onions with salt and pepper.
  5. Slice the chicken into thin strips.
  6. Chicken Fajitas Salsa: Once the chicken is cooked set it aside and in the same pan add in the corn, tomatoes, onions, jalapenos, cilantro, salt, pepper and cook on medium-high heat for 4- 6 minutes.
  7. Plate Chicken Fajitas: place a little bit of the beans, peppers and onions, chicken, corn salsa and cheese on a flour tortilla.
  8. Pork Fajitas: rub the pork down on all sides with the Spanish seasonings and place it in a medium size saute pan on high heat with 1 tablespoon of olive oil and sear it until is brown on all sides and medium to medium-well in the center.
  9. Pork Fajita Salsa: While the pork is cooking mix together mangos, onions, peppers, cilantro, lime, salt, pepper and set aside.
  10. Once the pork is finished slice it very thin.
  11. Plate Pork Fajitas: Place a few slices of pork on the corn tortilla along with a little bit of cabbage, mango salsa and cheddar cheese.
