Twice Baked Potatoes
These Twice Baked Potatoes are filled with roasted garlic flavor and are always the perfect side dish to any meal.
  • 3 Idaho potatoes
  • olive oil for coating
  • Kosher salt to coat
  • 2 tablespoons of sliced green onions
  • 4 tablespoons of shredded cheddar cheese
  • 2 tablespoons of sour cream
  • 1 tablespoon of roasted garlic olive oil
  • 1 ounce of unsalted butter
  • 3 tablespoons of chopped crispy bacon
  • Kosher salt and fresh cracked pepper to taste

  1. Coat potatoes in olive oil and Kosher salt and place on a baking sheet in the oven on 350 degrees for 60 minutes. In the mean time render 8 ounces of bacon and set aside.
  2. Once potatoes are done cut in half and scoop out the center. Take care not to break through the peel of the potato and also set the potato peel to the side.
  3. Run the inside that was scooped through a food mill or use a hand blender to make smooth. Once smooth fold in remaining ingredients and be sure to season.
  4. Scoop back into the potato shells and brush with butter. Place back in the oven for an additional 15 to 30 minutes. Serve hot and enjoy!
