Creamy Potato Soup with Bacon and Caramelized Onions
 
Try this Creamy Potato Soup with Bacon and Caramelized Onions that is perfect for those cold winter days!
Ingredients
  • 1 pound of chopped bacon
  • 1 small diced red onion
  • 1 small diced yellow onion
  • 2 sliced leeks (only the white part)
  • 6 small diced stalks of celery
  • ⅓ cup of chopped fresh garlic
  • 1 gallon chicken stock
  • 6 peeled and small diced Idaho potatoes
  • 1 pint of heavy cream
  • 1 cup of chopped parsley
  • Lea & Perrins to taste
  • Tabasco to taste
  • Kosher Salt & cracked pepper to taste
Instructions
  1. In a large pot on high heat render the chopped bacon until cooked and add in the onions, celery and garlic, and caramelize.
  2. After the vegetables are brown, add in chicken stock and bring to a boil.
  3. Once boiling add in peeled diced potatoes and simmer until potatoes are cooked.
  4. Using a hand blender puree half of the soup, be sure to leave it some what chunky.
  5. Next add in the cream and adjust all seasonings. Let simmer for 45-60 minutes longer on medium-low heat. Serve warm and enjoy!
