Asian Coleslaw Recipe with Orange Ginger Scallops

Ingredients
For the Asian Coleslaw:
  • 1 cup of matchstick carrots
  • 1½ cups of shredded green cabbage
  • 1½ cups of shredded red cabbage
  • 1 cup of green onions cut into 1
  • 1 cup of fresh cilantro leaves
  • 1 red bell pepper, seeded and cut into thin slices
  • 3 tablespoons of soy sauce
  • ¼ cup of rice wine vinegar
  • ½ cup of sesame oil
  • Kosher salt and fresh cracked pepper to taste
For the Scallops:
  • 8 ounces of dry packed scallops
  • 1 tablespoon of finely minced fresh garlic
  • 1 tablespoon of finely minced fresh ginger
  • juice of 2 oranges
  • 3 tablespoons of honey
  • 1 tablespoon of sesame oil
  • sesame seeds for garnish
  • Kosher salt and fresh cracked pepper to taste
Instructions
  1. Slaw: In a small bowl whisk together the vinegar, soy sauce and sesame oil and set aside. In a large bowl add in all the vegetables, season with salt and pepper and pour in the soy-vinegar, sesame dressing and mix thoroughly so all the vegetables are coated.
  2. Scallops: Season all sides of the scallops with salt and pepper and place them in a saute pan on high heat with 1 tablespoon of sesame oil. Cook on each side for 2 to 3 minutes or until golden brown and cooked through.
  3. Once cooked, removed the scallops from the pan and add in the ginger and garlic to the hot saute pan and caramelize. Once brown add in orange juice and honey and cook until the amount of liquid is reduced in half.
  4. To Plate: Lay down the Asian slaw with the scallops on top. Drizzle the orange-honey glaze a top the scallops and finish with sesame seeds.
