<p>Procedures:</p>
<ol start="1">
<li><b><i>Dressing:</i></b> In a small bowl whisk together mayonnaise, mustards, and vinegar until completely combined and set aside</li>
<li><b><i>Potato Salad:</i></b> In a large bowl coat the potatoes and toss with 3 to 4 tablespoons of olive oil and season with salt and pepper.</li>
<li>Transfer the potatoes to a sheet pan lined with parchment paper and bake at 400° for 12 to 16 minutes or until al dente (slightly crunchy) and caramelized.  Once cooked remove the potatoes from the oven and place them in the refrigerator until completely cooled.</li>
<li>In another large bowl mix together celery, sweet onions, green onions, parsley, bleu cheese and cooled potatoes and mix.</li>
<li>Pour the dressing into the bowl of vegetables and thoroughly mix until completely combined and adjust the seasonings with Kosher salt and fresh cracked pepper.</li>
<li>Serve cold.</li>

<p><b><span style="text-decoration: underline;">Gourmet Burgers and Vinaigrette Slaw</span></b></p>
<div><b><i>Onions:</i></b></div>

<ul>
<li>1/2 cup of balsamic vinegar</li>
<li>1 tablespoon of sugar</li>
<li>1/4 cup of olive oil</li>
<li>1 red onion sliced thick</li>
<li>1 yellow onion sliced thick</li>
</ul>
</div>
<div><b><i>Slaw:</i></b></div>
<div>
<ul>
<li>1/4 cup of sherry vinegar (can substitute with cider, white balsamic or red wine vinegar)</li>
<li>1 teaspoon of grainy mustard</li>
<li>1 tablespoon of honey</li>
<li>1/3 cup of olive oil</li>
<li>1/4 thinly sliced head of green cabbage</li>
<li>1/4 thinly sliced head of red cabbage</li>
<li>1 julienne red bell pepper, seeds removed</li>
<li>1 cup of thinly sliced green onions</li>
<li>1 cup of match stick carrots</li>
<li>Celery seed to taste</li>
<li>Kosher salt and fresh cracked black pepper to taste</li>
</ul>

<div><b><i>Turkey Burger:</i></b></div>

<ul>
<li>8 ounces of lean ground turkey</li>
<li>1 finely minced roasted red bell pepper</li>
<li>1/2 cup of shredded Mozzarella cheese</li>
<li>1/4 cup of bread crumbs</li>
<li>Lea and Perrins to taste</li>
<li>Kosher salt and fresh cracked black pepper to taste</li>
<li>BBQ sauce to taste</li>
<li>sliced avocado</li>
<li>pretzel buns</li>
</ul>
</div>
<div><b><i>Beef Burger:</i></b></div>
<div>
<ul>
<li>8 ounces of lean ground beef</li>
<li>2 finely minced large cloves of garlic</li>
<li>5 large leaves of fresh basil, chiffonade</li>
<li>1 teaspoon of unsalted butter</li>
<li>Kosher salt and fresh cracked black pepper to taste</li>
<li>leaf lettuce</li>
<li>sliced vine ripe tomates</li>
<li>sliced cheddar</li>
<li>white buns</li>
</ul>
</div>
<div><b><i>Serves 4 to 6</i></b></div>
<div><b><i> </i></b></div>
<div><b><i>Procedures:</i></b></div>
<div>
<ol>
<li><b><i>Onions:</i></b> In a small bowl whisk together vinegar, sugar and oil and pour into a ziploc bag along with the sliced onions and mix around.  Marinate in the refrigerator for at least 30 minutes.  Once marinated cook on a very hot grill (450° to 550°) on 4 to 5 minutes on each side or until caramelized and soft.  Use the remaining balsamic marinade to baste the onions while grilling.  Once cooked remove from the heat.</li>
<li>Slaw: In a medium sized bowl whisk together vinegar, mustard, honey, olive oil, salt and pepper to make a vinaigrette and set aside.  In a separate lare bowl mix together cabbages, pepper, onions and carrots.  Toss the mixture with a small amount of vinaigrette, salt, pepper and celery seed until all of the vegetables are coated and to your desired taste.  Set aside and keep cool.</li>
<li><b><i>Turkey:</i></b> In a large bowl mix together ground turkey, bell pepper, mozzarella, bread crumbs, lea and perrins and salt and pepper until thoroughly combined.  Once mixed together form two 4 patties and place on a very hot grill (450° to 550°) and cook for 6 to 8 minutes on each side or until dark grill marks are formed and completely cooked through.  Once cooked remove from the heat and set aside.</li>
<li><b><i>Beef:</i></b> In a small saute pan with butter, caramelize the garlic.  Once brown add to a large bowl with ground beef, basil salt and pepper and thoroughly combine.  Once mixed together form two 4 patties and place on a very hot grill (450° to 550°) and cook for 4 to 5 minutes on each side or until dark grill marks are formed or your desired internal <wbr />temperature has been reached.  Once cooked remove from the heat and set aside.</li>
<li><b><i>To Plate:</i></b> Place the cooked turkey burger on a pretzel bun, top off with BBQ sauce, a small amount of cooked balsamic onions and sliced fresh avocado.  Place the cooked beef burger on a white bun and top off with lettuce, tomato, cheddar cheese and a small amount of cooked balsamic onions.  Serve along side the vinaigrette cole slaw.</li>

<p>Procedures:</p>
<ol>
<li><em><strong>Baby Back Ribs:</strong> </em>Mix together all ingredients under BBQ rub and using 1/3 cup of the mixture, rub down the baby back ribs on all sides making sure to coat entirely. Set aside.</li>
<li><em><strong> Spare Ribs:</strong></em> Mix together Chinese 5 spice and salt and rub down the spare ribs completely covering all sides. Set Aside.  In a small bowl whisk together hoison sauce and honey until combined and set aside.</li>
<li><em><strong> Both Ribs:</strong> </em>Place the ribs in a smoker with Hickory wood chips and smoke for 4 to 6 hours or to desired amount of smokiness. Once the ribs are smoked place on a hot grill (450°F to 550°F) and cook for 4 to 6 minutes on each side. Baste the baby back ribs with the BBQ sauce as you grill and baste the spare ribs with mixed together hoison sauce and honey as you grill.</li>
<li><em><strong>Coleslaw:</strong></em> In a large bowl whisk together mayo, mustards, vinegar, salt and pepper until combined. Next add in bleu cheese, cabbages, green onions, carrots, salt and pepper and mix thoroughly.</li>
<li> <em><strong>To Serve:</strong> </em>Cut the baby back ribs in half and slice the spare ribs 2 at a time and serve both ribs alongside the bleu cheese coleslaw.</li>

<li><span style="font-size: 13px; line-height: 19px;">Place the seasoned chicken breast on a hot grill and cook on both sides cooking it completely through.</span></li>
<li><span style="font-size: 13px; line-height: 19px;">While the chicken is cooking add the vinegar, lime juice, mustard and honey to a mix bowl and whisk in oil. Season the vinaigrette with salt and pepper.</span></li>
<li><span style="font-size: 13px; line-height: 19px;">In a separate bowl add in the spring mix, corn, avocado, and tomatoes and dress the salad with the vinaigrette and toss thoroughly.</span></li>
<li><span style="font-size: 13px; line-height: 19px;">Place the mixed salad on a serving plate, slice the chicken and place it on top of the mixed salad.</span></li>

<b><span style="text-decoration: underline;">Baked Salmon with Lemon Dill Sauce</span></b></p>

<li>2 1/2 pound side of fresh Norwegian salmon, skin and bones removed</li>
<li>4 tablespoons of olive oil</li>
<li>2 to 3 tablespoons of Feisty Fish Rub</li>
<li>1 cup of Heinen&#8217;s lemon dill sauce</li>
<li>3 very thinly slices of shaved cucumber</li>
<li>3 thinly sliced radishes</li>
<li>1 radish crown</li>
<li>1 lemon cup</li>
<li>6 lemon twists</li>
<li>3 sprigs of fresh dill</li>
<li>1 tablespoon of capers</li>
<li>1/4 cup of micro greens</li>
</ul>

<div><b><i>Serves 3 to 4</i></b></div>

<div><b><i>Procedures:</i></b></div>

<li>Rub the salmon down with olive oil and season with fish rub.  Place on a sheet pan lined with parchment paper and roast in the oven on 400° for 25 to 30 minutes.  Once cooked, slice very thing on a bias and fan on a large platter.</li>
<li><b><i>To Plate:</i></b> Put as much lemon dill sauce into the lemon cup as possible and spread the garnishes all over the plate.</li>

<p><span style="text-decoration: underline;"><strong>Huevos Rancheros with Avocado and Crispy Bacon </strong></span></p>
<div><b><i>Salsa:</i></b></div>
<div>
<ul>
<li>1 roughly chopped yellow onion</li>
<li>2 roughly chopped jalapeños</li>
<li>3 cloves of finely minced garlic</li>
<li>1 tablespoons of olive oil</li>
<li>two 28 ounce cans of plum tomatoes and juice</li>
<li>1 tablespoon of adobo sauce</li>
<li>1 1/2 tablespoons of ground cumin</li>
<li>juice of 2 lemons</li>
<li>juice of 1 lime</li>
<li>Kosher salt and fresh cracked pepper to taste</li>
<li>1 cup of chopped fresh cilantro</li>
</ul>

<div><b><i>Eggs:</i></b></div>

<li>4 eggs</li>
<li>15 ounce can of refried pinto beans</li>
<li> slices of cooked bacon</li>
<li>shredded Manchego cheese</li>
<li>sliced avocado</li>
<li>non-stick spray</li>
<li>6 warm corn tortillas</li>
<li>Kosher salt and fresh cracked pepper to taste</li>
</ul>

<div><b><i>Serves 2</i></b></div>

<div><b><i>Procedures:</i></b></div>

<ol>
<li><b><i>Salsa:</i></b> In a large hot pot with olive oil caramelize the onions, jalapeños and garlic. Once brown, add in tomatoes, adobo, cumin, lemon and lime juice and Kosher salt and fresh cracked black pepper to taste.  Cook for 10 minutes and puree until chunks are rice sized.  Finish with cilantro.  Keep warm or chill, depending on your preference.</li>
<li><b><i>Eggs: </i></b>In a non-stick skillet with non-stick spray, saute eggs to desired doneness and season with salt and pepper.  In a separate small pot heat the refried beans until hot.</li>
<li><b><i>To Serve:</i></b> Place down 3 tortillas and next stack on top: bacon, 2 eggs, 2 ounces of salsa, shredded cheese and avocados.</li>

<p>Procedures:</p>
<ol>
<li><em style="font-size: 13px; line-height: 19px;"><strong>Cornbread: </strong></em><span style="font-size: 13px; line-height: 19px;">In a large bowl add together eggs, melted butter and sugar and whisk until combined.  In a separate bowl mix together buttermilk and baking soda.  Once combined add to the butter, sugar mixture and stir well.  Next add in remaining ingredients and mix until very few lumps remain.  On a sheet pan with parchment paper and non-stick spray pour corn bread batter and spread evenly.  Bake at 375 degrees for 30-40 minutes.   Once baked removed from the oven to cook and using a circle cutter, cut out small 1 inch rounds and set aside.</span></li>
<li><em style="font-size: 13px; line-height: 19px;"><strong>Chorizo:</strong> </em><span style="font-size: 13px; line-height: 19px;">In a large hot saute pan on high heat, cook the sausage on all sides until golden brown and cooked through out (If desired, finish in the oven on 375° for 6 to 8 minutes after sauteeing).  Once cooked slice thin and set aside.  </span></li>
<li><em style="font-size: 13px; line-height: 19px;"><strong>To Plate:</strong> </em><span style="font-size: 13px; line-height: 19px;">Place a small amount of mascarpone cheese and honey on a 1 inch cornbread round and top of with 1 slice of chorizo sausage and garnish with micro-greens.  </span></li>

<li><em style="font-size: 13px; line-height: 19px;"><strong>Salmon:</strong></em><span style="font-size: 13px; line-height: 19px;"> Add the salmon, eggs, lemon juice, bread crumbs, salt and pepper to a food processor and blend until it becomes a thick paste.  Once it is processed, form 2 to 3, 6 to 8 ounce salmon patties and place on a hot grill and cooke for 6 to 7 minutes on each side or until golden brown and cooked through.  Next, brush the slices of bread with melted butter and grill on high heat until toasted.  Once everything is cooked, remove from the grill and set aside.</span></li>
<li><em style="font-size: 13px; line-height: 19px;"><strong>Coleslaw:</strong></em><span style="font-size: 13px; line-height: 19px;"> In a large bowl mix together cabbages, onions, carrots, bell peppers and parsley.  In a separate bowl whisk together mayonnaise, mustards, vinegar and dill.  Once whisked together fold the mayonnaise mixture into the vegetables and mix thoroughly.  Adjust the seasonings with salt and pepper and chill.</span></li>
<li><em style="font-size: 13px; line-height: 19px;"><strong>To Plate:</strong> </em><span style="font-size: 13px; line-height: 19px;">Place the salmon burger on the toasted Italian bread and top off with the coleslaw.  Serve with fresh seasonal fruit!</span></li>

<p><span style="text-decoration: underline;"><strong>Curry Fried Chicken Salad</strong></span></p>

<ul>
<li>2 chopped packed cups of trimmed fried chicken</li>
<li>3 small diced stalks of celery</li>
<li>2 finely minced cloves of garlic</li>
<li>1/2 small diced red onion</li>
<li>1/4 cup of golden raisins</li>
<li>1/4 cup of dark raisins</li>
<li>1/3 cup of chopped pistachios</li>
<li>1/2 cup of mayonnaise</li>
<li>2 tablespoons of dijon mustard</li>
<li>1 tablespoon of curry powder</li>
<li>Lawry&#8217;s seasoning salt and cracked black pepper to taste</li>
<li>croissants (or desired bread of choice)</li>
<li>lettuce leaves for garnish (optional)</li>
<li>sliced tomatoes for garnish (optional)</li>
<li>watermelon</li>
<li>strawberries</li>
<li>raspberries</li>
<li>blackberries</li>
<li>blueberries</li>
</ul>

<li>In a large bowl mix together chicken, celery, garlic, onion, raisins, pistachios, mayonnaise, mustard, curry, salt and pepper until completely combined.  Serve the chickensalad on a croissant with lettuce and tomatoes.</li>
<li>Serve alongside fresh fruit.</li>
