Think of these Mini Cornmeal Cupcakes with Maple Butter Cream almost like cornbread muffins with maple, except they are packed in little bites and way more delicious. The cornmeal cupcakes batter is the same as cornbread muffins except I may have put a little more sugar in it, but I can’t be sure :-).  Next spray PAM Original No-Stick Spray into a mini 24 muffin tin, ad in the batter and bake. You already know that chocolate goes with coffee, so why not whip up this Leftover Coffee Chocolate Brownies Recipe?  The best part is that you literally use leftover coffee from the pot. I added in some chocolate chips to ensure they were extra chocolatey.  In addition to the leftover coffee, I used some espresso grounds to help enhance the coffee flavor.  Sorry, I like coffee :-).
